Welcome to Global Wines
Dão Sul Company Foundation
Dão Sul Foundation – Wine Society, SA, in Carregal do Sal.
GLOBAL WINES
We were born in 1990 in Dão, under the company’s name Dão Sul.
We wanted to be the biggest company in the oldest region of still and unfortified wines in Portugal- the Dão Wine Region.
When we reached that goal, we chased other dreams, other adventures, in other regions and other countries.
Today we are still the leading company in Dão. But we are also a company from Bairrada, from Alentejo, and even from Brazil. We currently have 5 wine tourism spaces, in which three have restaurants. We pair wine with gastronomy, and bring to life the greatest sensations, in one perfect experience. We receive, daily, visitors from all over the world, and we seek to give them the best gastronomical and wine experiences.
We travel the world and are, currently, present in five continents.
Nowadays, our brands reach over 40 countries.
With wines praised by the top world critics, the doors have been opened and the dream is being fulfilled.
Today, as always, the path is forward and the future is what moves us.
Every day we build another step towards world recognition, in a work that is done by people and for people. Through the language of wine, we build a bridge between a small mountainous region in the centre of Portugal and the world.
We blaze the trails of wine with determination, because we know exactly what our goal is: to be present at every table in the world. We raise our glasses to cheer to all those who share our passion, a passion that drives us in our work, harvest after harvest: the wine, in a trip that repeats itself, year after year, for thirty years.

MONTE DA CAL
Surrounded by the quietness landscape of northern Alentejo, Monte da Cal merges perfectly with the soothing environment of the nature in this part of the country and is rimmed by an infinity of vineyards, cork oak trees, and olive trees, that only disappear far away on the horizon. Here, we plant the red varieties Trincadeira, Syrah, Aragonês, Alicante Bouschet, Alfrocheiro and Touriga Nacional; and the white varieties Antão Vaz, Viognier, Arinto and Alvarinho. The architecture and décor of the estate reflect the Arabic influences that are deeply present in Alentejo’s culture, along with the estate’s modern cellar where all the wines are produced and aged reflecting the typical Terroir of the Northern Alentejo.
Monte da Cal’s portfolio fully addresses the goal of producing high-quality wines, that target small niches in the market, as well as some great value wines. Monte da Cal offers a white and a red, elegant, fruity and smooth wines but keeping the authenticity of alentejo. The high-end wine are all under the brand Saturno, where we can find incredibly fresh and with great complexity wines, highlighting the unique Terroir of the estate.

Dão Demarcated Region was created in 1908. Known as the “Portuguese burgundy”, Dão region, in the center of Portugal (at “Beira Alta” province) was the first demarcated region of non-liqueur wines of the country.
With about 20,000 vineyard hectares, on approximately 376,000 hectares of land, Dão Region extends through Coimbra (Arganil, Oliveira do Hospital, Tábua), Guarda (Aguiar da Beira, Fornos de Algodres, Gouveia and Seia) and Viseu (Carregal do Sal, Mangualde, Mortágua, Nelas, Penalva do Castelo, Santa Comba Dão, Sátão, Tondela and an area of Viseu). The main region characteristics are the rugged terrain, the soil predominantly granitic, with a unique terroir, and a large thermal amplitude. Dão wines, which pair perfectly with the local gastronomy, have an exceptional acidity, complexity and delicate aromas. These wine’s character, balance and elegance, and the aging potential distinguish them from all the others. The main Dão varieties are Touriga Nacional and Encruzado. Touriga Nacional is the noblest variety: wines made of these grapes have good alcoholic content, noble tannins, and intense aromas, are full-bodied, and great aging potential. Encruzado variety is the noblest of white varieties: its wines have good alcoholic content, complex aromas, are fresh and dry.
The Demarcated Region of Bairrada is in Beira Litoral between Águeda and Coimbra and the dunes on the coastline.
Bairrada has a mild climate due to its proximity to the Atlantic Ocean. Even though wine making has existed in this region since the X century, it wasn’t until the XIX century that it became a producer of high quality white, red and sparkling wines.
In this plain land, there are two types of soils that result in diversified wines: the clayey soils, whose name in Portuguese “barro” gave the region its name and the sandy soils. Baga is the dominant vine variety of the region. It grows in the clayey soils and results in wines that are full of colour and very rich in tannins which gives them great longevity. Within the white varieties, that are grown in the sandy soils of this region, the most prominent varieties are Bical and Fernão Pires, from the region that is named Maria Gomes and that produces delicate and aromatic white wines.
The naturally sparkling wines of the region are commonly used to accompany the region cuisine such as the tradicional “Leitão da Bairrada”.
It was recently allowed for foreign varieties to be grown in the DOC region such as Cabernet Sauvignon, Syrah, Merlot and Pinot Noir that now share the land with the national varieties.
Alentejo is one of the largest wine-growing Portuguese regions, with about 22,000 hectares of vineyards. This region – made of large plains, with hot and dry climate – produces great wines with national and international recognition.
The area of Portalegre stands out in Alentejo region because it benefits from Serra de São Mamede influence. Here, vineyards are planted on the mountain steep and granitic slopes, enjoying a microclimate (the altitude makes the temperatures lower). Soils are very heterogeneous – composed of clay, granite, limestone or shale – but not very fertile. The region is divided into eight sub-regions of “Denominação de Origem Alentejana” (Denomination of Alentejo Origin): Reguengos, Borba, Redondo, Vidigueira, Évora, Granja-Amareleja, Portalegre and Moura. Alentejo has a great diversity of varieties, but the most important are Roupeiro, Antão Vaz and Arinto. Trincadeira, Aragonez, Castelão and Alicante Bouschet (a French variety adapted to the Alentejo’s terroir) are also very important red varieties. White Alentejo’ wines are usually smooth, slightly acidic, with tropical fruits aromas. Reds are full-bodied, tannin-rich, with wild and red fruits aromas.
“Vinho Verde” Demarcated Region occupies the entire northwest of Portugal, area traditionally known as entre-douro-e-minho.
The region it’s bordered, on the North, by the Minho River, which is also part of the border with Spain; on the south by the river Douro and the Freita, Arada, and Montemuro mountains; on to the East by the Peneda, Gerês, Cabreira and Marão mountains; and on the west by the Atlantic Ocean. It’s the largest Portuguese Demarcated Region and one of the Europe largest. The region – with Atlantic influence, most soils of granite origin, mild climate, and high precipitation – has excellent conditions for white wines, sparkling wines, and spirits production. The wines produced where are fresh, smooth and elegant. The region was divided into nine sub-regions, according to its different soils and microclimates: Amarante, Ave, Baião, Basto, Cávado, Lima, Monção and Melgaço, Paiva, Sousa. Many of the grape varieties produced in the Vinho Verde Region are considered indigenous due to their long history in the region and because they appeared only in the Iberian Northwest. The main white varieties are Alvarinho, Arinto, Avesso, Azal, Loureiro, and Trajadura. The main region red varieties are Espadeiro, Badeiro, and Vinhão.
Bordered by Douro River, the Douro region produces wines – among which, the world-famous Port Wine – for more than 2,000 years.
With about 250,000 Ha, vineyards occupy near 18% of the region area. Surrounded by mountains, Douro has its own climatical characteristics. The soils are mainly composed by “Xisto-Grauváquico” although there are also granitic solos in some areas. This region soils are especially hard to work, not only because of their composition but also because of the steep terrain slope. However, these soils are good for the vine’s longevity, allowing musts with more concentration of sugar and color. The man transformed, with their work, the Douro hostile soils into vines, creating three distinct forms of planting: in the typical terraces (in Portuguese, “socalcos”), on levels and elevated. Terraces are common in steep slopes’ areas and resemble balconies divided by shale walls. The levels are also made creating balconies, but without walls to stop the lands. The elevated plantation contemplates the lands drainage and the necessary space for the machine’s intervention and circulation on the vineyards. The Douro vineyards range from the top of the deep valleys to the river bank, creating a unique landscape recognized by UNESCO, in 2001, as World Heritage. This splendid scenery combines with the excellence of the wines produced in the three Douro sub-regions: on the west “Baixo Corgo”, on the center “Cima Corgo” and on the east, the “Douro Superior”. The region climate – located in deep valleys, sheltered by mountains – is strongly influenced by Marão and Montemuro mountains, which protect the area from the west’ humid winds. The very cold winters and the very hot and dry summers are distinctive from this region. The Demarcated Region of Douro divides itself in the Low Corgo (on the west), Cima Corgo (on the center) and Upper Douro (on the east).
The Lisboa region – once known as “Estremadura” – has a long history in the Portuguese viticulture. In this region, we find, mainly, the Portuguese traditional grape varieties and the most well-known international varieties.
Lisboa region, with its variety of reliefs and microclimates gathered in small areas, produces a wide variety of wines. Located in the northwest of Lisbon, in an area of approximately 40 km, the region has a temperate climate, cool summers and mild winters, result of the Atlantic influence. The Region has nine Origin Denominations: Colares, Carcavelos and Bucelas (in the south area, near Lisbon), Alenquer, Arruda, Torres Vedras, Lourinhã and Óbidos (in the region’s center) and Encostas d’Aire (on the north, near to the Beiras region). The soil constitution is very diverse, varying from brown or red calcareous soils to fine sandstones ones. Vegetation in the region’s northern part is similar to the Central Europe ones, while at the southern end the vegetation has Mediterranean characteristics.
The blue sky, the great lighting, the fertile soil and water aplenty have transformed the region of the San Francisco Vale into one of the greatest wine producers in Brazil.
It is 500 kilometres away from Salvador and between Sertão da Bahia and Agreste. This region has the name of the river that crosses the most states in Brazil: Bahia, Pernambuco, Minas Gerais, Alagoas and Sergipe.
The viticulture with the goal of wine production is a recent endeavour of the region of the San Francisco Vale. It began in the 80’s with the implantation of European vines that were taken from the South of Brazil. In the 90’s and early 2000, new companies emerged in the region which led to a significant increase of the quantity of wine that was produced. The main varieties that are used in this region are Cabernet Sauvignon, Syrah, Aragonês, Touriga Nacional, Alicante Bouschet and Moscato Canlli.
The Vale represents nowadays the second largest wine producing region in Brazil and represents about 15% of the national market.
QUINTA DE CABRIZ
In the heart of Dão, in Carregal do Sal, the headquarters of Global Wines, lies Quinta de Cabriz that welcomes the scents and flavours of the unique gastronomical tradition of the region. In a beautiful location – those who visit us can see several mountainous points, to the west Serra do Caramulo, to the south the famous Buçaco, to the north, Serra da Nave and to the east the majestic Serra da Estrela – we have Quinta de Cabriz that has several different rooms with different purposes. Sala do Alambique (or Alembic Room) is meant for groups, the cellar is meant for tastings, of wines and delicacies from Beira, in an environment made heartening by the barrels. At the restaurant – that serves traditional and regional food from Beira – we have lunches and dinners, and our wine menu is one of our strong suits. The blood sausage and the “pataniscas” (codfish fritters) as an appetizer, codfish with “broa” or the roasted young goat as a main course, curd cheese with pumpkin jam or “tigelada” for dessert, are some of the most famous dishes of this restaurant. You can also try one of the three different tasting menus. The restaurant lies within a wine producing estate which makes the wine tastings a mandatory experience. Quinta de Cabriz also offers, by appointment, wine courses, olive oil tastings, tours to the cellar, cooking workshops and event planning.

PAÇO DOS CUNHAS
Known as the pearl of wine tourism in Dão, Paço dos Cunhas in Santar (10 miles from Viseu) built in 1609, is a unique space, one of the most notorious wine tourism experiences in Portugal. Unique and noble, with an incredibly valuable patrimony of antique décor pieces and a centuries old architecture, it is rimmed with gardens and has one of the most emblematic vineyards of the region, Vinha do Contador. The history of this estate has always been connected to wine. This house has been producing wine, olive oil and fruit since the 17th century to sell in the markets of Porto. In 2008, this 16th century building was renewed by the architect Pedro Mateus, who blended modern architecture with a classical style and turned it into a charming tourism location, with a restaurant, a shop and several event rooms.
A house filled with the flavours and scents typical of Dão, Paço dos Cunhas has an outstanding author cuisine that is part of a unique wine experience. Here, the rewriting of Portuguese traditional cuisine has the signature of chef Henrique Sampaio Ferreira, that turns the typical dishes into nouvelle cuisine. With several different rooms, spaces and environments, theme rooms, a balcony with tables, a wine store, wine bar and a playground, this is a wine tourism location where tradition and History are everywhere. Paço dos Cunhas also organizes, by appointment, wine workshops, cooking shows and visits to the basement of Casa de Santar. Weather permitting, the wine tastings are held in the balcony of the tasting room, one of the most unique spaces in this charming estate.

QUINTA DO ENCONTRO
Upon arrival, Quinta do Encontro greets its guests with its sparkling wine served at its ideal temperature. Then, they shall begin an unforgettable journey. A cellar, a wine store, a restaurant and a grand multi-purpose room, scattered through three stories, that is Quinta do Encontro. It is located in the heart of Bairrada, in São Lourenço do Bairro, where the wine making tradition started all the way back in 1930. The cellar from Quinta do Encontro opened in 2007 and was designed by the architect Pedro Mateus. It blends perfectly with the landscape of the vineyard and with the nature that surrounds it and was born from the desire to do something different and creative to broadcast the wines from Bairrada. In the midst of a serene landscape, overrun by vineyards, with the mountains of Caramulo and Buçaco in the background, Quinta do Encontro invites all those who visit it to have direct contact with the world of wine production, from the vine to the tasting, and to taste the nectars produced in this cellar. The design of the cellar is all about the world of wine: the building is round in shape and made of wood which takes us to the inside of a barrel; there are no stairs inside and the movement is all done in a spiral that mimics the motion of a corkscrew; the bottle shaped fireplace, one of a kind and designed specifically for this cellar, is the perfect ending to this trip into the world of wine, inside our cellar. Quinta do Encontro has plenty of room for weddings, christenings, music shows and corporate and group events with a fusion menu that creates a perfect balance between the typical gastronomy of the region and author cuisine. Leitão à Bairrada (sucking pig) and the sparkling wine crème brûlée are mandatory delicacies along with our tasting menus. To give a perfect ending to a tour of this house, this unique encounter should end with a sparkling wine glass from QdoE in the panoramic balcony of Quinta do Encontro, with the beautiful vineyards that spread out as far as the eye can see and with Serra do Caramulo and Buçaco as a background.
